An Apple a Day

Homemade Apple Pie

I've never been a big apple fan. I'm not one to just eat a fresh apple, so I have trouble heeding the "an apple a day" advice. . My last two baskets from Bountiful Baskets have included a generous number of Gala apples, so I went looking for a recipe to use them.

Last week, I made a wonderful, simple apple crisp. I used this recipe minus the apple juice and the flax seed. I thought it was delicious for a healthier (1/2 the calories and half the fat) recipe.

This week, I graduated to this homemade apple pie, including a scrumptious homemade crust. I've been reluctant to make pie crust since my efforts years ago were disappointing. I remember the pies my mother made (wonderful pie crust) and mine just didn't measure up, until this time. Fond memories of watching my mother make pies and then using the leftover pie crust to make these:

Roll out leftover pie crust
sprinkle with sugar and cinnamon
Bake in 350 oven for about 10-15 minutes
Yummmm!

PS Stop over at my blog for a great, EASY, recipe for apple cake--It's almost as quick as a cake mix, except you do have to cut up the apples, lol.
