What do you do with a 6 pound zucchini, Part 3



Today, I used s small portion of "The Zucchini" to make vegetable stir fry. I picked up a few other fresh veggies at a Farmer's Market we had at work today and used them as well...a little olive oil and garlic, carrots, a small potato, part of an onion, red pepper, salt and pepper, and Parmesan cheese. The red pepper was the only "foreign" or non local element as the grocery store sticker says it came from Canada. I actually notice that our local Winco store has a fair bit of produce from Canada, which seems a little surprising since I expect most of the produce to come from south of us here.

As you can see from the picture, there is still about half of the original zucchini left. I may take the advice of one of my readers and grate and freeze the rest of the beast. Check back later to hear about the fate of the remaining vegetable.

I have a wonderful recipe for a zucchini casserole (uses italian sausage, eggs, mozarella cheese, parmesan cheese, garlic, onions and baking mix) and I make them 2 at a time; if you'd like it just email me at klpich@aol.com

but grating it and freezing it works wonderful; I've done it several times this summer!

Oh no! The zucchini that will never go away! I could imagine your story having many, many parts. Grating and freezing is the perfect solution. Your recipe sounds delicious! You could eat that for the next few weeks. Perhaps that would use up the zucchini!

I know my Mom always used to shred and freeze her zucchini, then she could make zucchini bread all year long!
