Easy Peasy


I love meals and other things that are simple, but wonderful. I have two to share today. I finished knitting the Toddler Republic Hat from Kniksnits blog. This was a one evening project, except I had to go to the fabric store today to find an approporiate button.

My version has a little shorter brim (about 2 1/2" rather than the 3" in the original pattern) and I used two different yarns because I didn't have enough of the main color and also because I wanted it to match the "Swing Thing" I am knitting for my grand daughter.

I also made a wonderful recipe discovery, something very simple but delicious, Crock Pot Enchilada Casserole. We love enchiladas, but sometimes they are just too much work to make from scratch. I didn't take a photo, but to be honest these taste much better than they look. I highly recommend the recipe. I didn't have jalapenos, but I sprinkled some red pepper flakes on top. Next time, I may make these with chicken instead of ground beef.

The enchilada crock pot recipe looks easy. must try it; don't use my crock pot much.

I wish I could make a cute hat like what you made!!Your hat is lovely..I love Enchilada but the problem is I don't know how to make Enchilada..My mom always cooks for me..LOl!!How pity of me..
