What Do You Do with a 6 Pound Zucchini, Part Two


Today, I made a little more progress on using up my giant zucchini. I found this recipe and several others for zucchini slaw. I chose this one because it seemed most similar to my own coleslaw recipe.

I still have over half the original zucchini in my fridge. So, I guess I'll have to come up with some new recipes. Zucchini relish has been suggested, but that doesn't really appeal to me, so I guess I'll have to go looking for recipes. I'm thinking some kind of sauteed zucchini/vegetable dish for tomorrow.

Are you freezing any? We used to grate the zucchini, and then freeze it in recipe-sized portions. Margarine tubs were what Mama used, I think. No blanching or anything, and all through the winter we had zucchini bread whenever we wanted it!
