What do you do with a 6 pound Zucchini, Part One




This zucchini was on my porch this morning, a gift from my neighbor. Since I didn't plant any vegetables myself this year, I've have welcomed the gifts of fresh produce that have come my way. I was struck by the fact that this zucchini weighs as much as my first born did. And what do you do with a zucchini this size?

I found this recipe for Whole Wheat Zucchini bars and decided to test them out. The recipe calls for 2 cups of shredded zucchini, however, you can see I still have a majority of the zucchini remaining. The frosting is a nice combination of a little melted butter, powdered sugar, and cinnamon. I figure anything with frosting will disappear in my house. By it's actually very good, moist, and more cake like than I expected with the "bar" name.

had to laugh at you holding that zucchini and thinking about your child weighing that amount. That's OK. At least he/she didn't LOOK like that zucchini!

Wow! With a zucchini that size, you'll be baking bread, muffins, and all kinds of goodies. Good thing you can freeze that stuff, or else you'd be giving all your baked goods away.
