The End of the 6 Pound Zucchini



Finally, I'm at the end of the giant zucchini. I grated up the remains which netted me two freezer packs of about 2 cups each and 3 cups for this great looking recipe "Casserole Bake" which was shared by Robin: http://www.cooks.com/rec/view/0,198,150178-227192,00.html
Ingredients include sausage (I used regular mild sausage as Robin suggested), eggs, Bisquick, cheese and of course ZUCCHINI (3 cups of it). I also included lots of garlic and one garden tomato.

It's in the oven as I write this but I can tell it is going to be delicious already.

P.S. it was delicious!

Looks delicious. I have to say, I'm kind of sorry to see the end of the zuke. Got any giant humongous pumpkins?

Not to worry, I have about 4 cups in my freezer! No pumpkins, though.
