Improved Wedgewood bag; Vegetable salad
The other is that I discovered a wonderful new recipe. It was shared by a friend of a friend. I don't plan to turn my blog into a source of recipes, but this one was special and after all, even crafters have to eat! It is very different and refreshing; we had it with blackened fish and it was a wonderful contrast to the spicy main dish. I cut the recipe in half (still plenty as a side dish for 4 I would think) and made it without the shredded cheese and corn chips but I'm sure it would be great with them also.
Veggie Salad
2 tomatoes chopped
2 bell peppers--one green and one red
2 large cucumbers
1 can black beans-drained and rinsed
2 cups fresh corn cooked, cooled, and cut off the cob
1/2 medium sweet onion or green onions
Shredded cheddar cheese
Corn chips
Chop all the veggies to about 1/2 inch square pieces. Top with dressing and marinate. Serve with cheese and crushed corn chips mixed in or let each person do their own cheese and chips.
Dressing:
1/2 cup olive oil
1/4 cup lime juice
2 1/2 tablespoons honey
2 teaspoons ground cumin - or more
1 large bunch fresh cilantro leaves, chopped
1/4 teaspoon salt or more to taste
Mix together.
I'm guessing this will be even better leftover. Enjoy!
